Welcome back to another italian basic knowledge, how to! today we will make another great classic of italian cuisine, maybe the simple essence of italian cuisine: Homemade pasta with eggs. This is the standard classic recipe so 1 eggs every 100 gr of flour, in some zone of north italy there are recipes with more eggs but for this time we will stay on the most classic of the recipes.

INGREDIENTS
200 gr type 00 flour or All purpose – 7.05 ounce
100 gr semolina flour – 3.53 ounce ( You can also increase the amount of semolina flour and decrease the all-purpose flour if you want to get a rougher and more rustic dough. )
3 eggs
20 gr extra virgin olive oil – 0.71 ounce
salt

INSTRUCTION

Put 200 gr all-purpose flour and 100 gr semolina flour on a pastry board making a hole in the center where we will put 3 whole eggs and 20 gr extra virgin olive oil.
With a fork we amalgamate the eggs and let the flour be incorporated, we salt the dough and continue this operation until it will be possible to work it by hand.

We work the dough until it is smooth and even. Leave it to rest in a film in the fridge for 30 minutes at least.

now with the help of a pasta machine begin to lower the thickness of the dough
the dough will be ready when it is one millimeter thick or a little more

At this point with a knife cut the irregular edges to obtain rectangles, the leftovers of the dough can be put on one side and then put them together and work them again.

Flour them slightly and roll the strip of dough. Take a knife and cut the dough every centimeter to obtain tagliatelle, if you cut the dough every 0.5 cm you have tagliolini instead!

You can also cut the dough in piece of 2 x 3 cm then pinch this pieces in the middle to obtain homemade farfalle

If you keep the rectangles intact you have a lasagna instead
