Italian Meatball Rice Casserole
Ingredients
2 C Arborio Rice (pre cooked)
2 C Tomato Sauce homemade sauce or use store bought
4 Eggs hard boiled, peeled, and sliced
1 C Romano Cheese or Parmesan (grated) Add more if you like
1 1/2 C Mozzarella sliced or Shredded )(Use the 1/2 C for browning at the end)
2 Tbsp. Butter (for the pan)
1/3 cup Breadcrumbs
Pre made Meatballs about 14 small or 8 large cut up
Salt to taste
Black pepper to taste
We used a Large spring form pan
