– 4 ounces of flour (keep extra on side to add while rolling dough)
– 2 eggs
– drizzle olive oil
– salt to pinch
** for green color add 2 ounces of boiled spinach and for red color add boiled beets

INGREDIENTS FOR TORTELLONI FILLING:
– 12 ounces of ricotta cheese
– 1 ounce of asiago cheese
– parsley
– 1 egg
– pinch of salt
– pinch of pepper

INGREDIENTS FOR SPECK AND ROSEMARY SAUCE:
– 1 shallot
– parsley
– rosemary
– speck italiano
– pinch of pepper
– pinch of salt
– drizzle olive oil
– can of diced tomatoes
