Sbrisolona is a typical cake of north italy. Normally it has cream or chocolate inside but this time i’ve done a pumpkin cream for the filling and the outcome it’s very tasty and sweet. The cake and the cream have some amaretto cookies crumbled inside to give an additional delicious note ^_^
This recipe it’s not difficult at all and the outcome is granted!!

INGREDIENTS

For the cake

200 gr all purpose-flour
190 gr sugar
100 gr almond flour
12 gr instant yeast
120 gr butter
2 eggs
18 amaretti cookies in total

For the cream

450 gr pumpkin
150 gr cream cheese
150 gr brown sugar
1 teaspoon vanila extract
half lemon
cinnamon

put 200 gr all purpose flour on a pastry board

add 100 gr of almond flour, 190 gr sugar and 12 gr of instant yeast
add 120 gr of butter
begin to work the dough
put 2 eggs once at the time

work the dough to obtain big “crumbs”
Put the dough in fridge for 1 hour

Take 450 gr of pumpkin in little dice and add 150 gr brown sugar, a tablespoon rhum with the seeds of a vanilla bean or a teaspoon of vanilla extract, a quarter grated lemon zest a couple of pinches of cinnamon

mix the mixture and let it rest for 15 minutes

put the mixture in a pan and cook for 30 minutes

put the pumpkin in a food processor and add 150 gr of cream cheese

in this cream crumble 6 amaretti cookies. Mix well

butter a springform pan

Put half dough in the springform pan and press gently

Add the pumpkin cream

crumble 6 amaretti cookies

Complete with the remaining dough

crumble other 6 amaretti cookies

Put in the oven for 30 minutes at 180° C
