Fettuccine Alfredo or fettuccine al burro ‘fettuccine with butter’ is an Italian pasta dish of fresh fettuccine tossed with butter and Parmesan cheese. As the cheese melts, it emulsifies the liquids to form a smooth and rich sauce coating the pasta.Alfredo is one of our favorite dinners around here but most classic alfredo sauces leave me feeling completely weighed down. Plus they don’t tend to reheat well.
So my version uses milk in place of the heavy cream, and instead of using a full stick of butter I’ve found 1 Tbsp is just enough to keep it rich and creamy. And since I’ve made these adjustments it’s thickened up with just a hint of flour.
Ingredients
1 bowl pasta
1 cup milk
1/2bowl cheese
1tbsp butter
2tbsp oil
1tbsp maida/all purpose flour
1/2bowl corn kernels
1onion chopped
1/2 red bell pepper chopped
1/2yellow bell pepper chopped
1/3 broccoli chopped
1tbsp chopped garlic and ginger
1/2tsp black pepper powder
salt as per taste
chopped green onions and coriander for garnish
