Today we are going to show you how to make Erica’s grandma meatballs recipe! These are traditional Italian meatballs, quick and easy but full of flavour!

Grandma’s Italian Meatballs Recipe

Ingredients
Meatballs
1 kg minced beef
40 g breadcrumb
60 g cheese – it should be Parmesan cheese though you can use whatever hard cheese
75 g milk
4 g sea salt
4 g nutmeg

Tomato sauce
1 l tomato passata
80 ml mineral water
4 garlic cloves
5 tbsp extra virgin olive oil
4 g sea salt (or to your taste)

Direction
▪︎ in a bowl mix together all the meatballs’ ingredients keeping the parsley for last
▪︎ mix until well combined and form your meatballs, we roll ours to fit in the palm of our hands
▪︎ once you rolled all your meatballs keep them aside
▪︎ place a pot on the stove on medium heat, add your oil and then the garlic
▪︎ fry the garlic for 1 minute then add the tomato passata and the water, cook it for 3/4 minutes
▪︎ add your meatballs making sure to fit them properly, do not stack them on the top of each other
▪︎ close the pot and let it cook for 10 minutes, do not open it!
▪︎ after 10 minutes jiggle the pot making sure the meatballs are not stuck to the bottom of the pot or together
▪︎ taste the sauce and add salt if needed
▪︎ keep cooking uncovered for 5 to 10 minutes, as per your liking – if you like your sauce softer cook it for 5 minutes, if you want the sauce thicker cook it for 10 minutes
▪︎ we recommend you checking the meatballs after 5 minutes as they should be ready, cooked through but still soft and juicy
▪︎ you can remove the meatballs and keep cooking the sauce if you like

▪︎ cook your pasta in salted boiling water as per instructions on the package
▪︎ strain it well
▪︎ add the pasta to your sauce and enjoy

▪︎ you can otherwise have meatballs with polenta, vegetables, mashed potatoes and why not, in a sandwich!
