The day I tried this recipe I was in Sondrio, the heart of Valtellina Italian region, and that day my perception of pasta transformed completely. Being pasta in general one of my favorite foods, I couldn’t believe it could go to an upper level. It just blowed my mind with the first bite 🤯❤️ the mix of textures, flavors and smells are out of this world. I knew I had to learn how to cook this recipe 🤩
This recipe is a good representation of the Alpine diet 🏔It starts from an unconventional pasta made from buckwheat grain, mixed with cabbage, potatoes and a lot of cheese 🧀 😋
Ingredients:
-buckwheat pasta 250g
-cabbage 200g
-potatoes 240g
-casera cheese 180g
-grana cheese 40g
-butter 80g
-garlic
-salt
Tips: when boiling the ingredients in the pot place the container where you will mix on top, so it absorbs some heat to then melt the cheese at the end.
