An absolutely unique vegetable made with baby Zuchini and Baby Squash with a burst of flavours of garlic , Italian Parsley and Parmesan Cheese. A great accompaniment with any soup and can be served as an entre during lunch or dinner!!
Serves 4 Persons
Ingredients :
1 pd of Mixed Baby Squash washed and Par boiled
2 tbsp of chopped Garlic
2 tbsp chopped Parsley leaves
2 tbsp grated Parmesan Cheese
1 tbsp Bread Crumbs
Olive oil to drizzle
Garlic salt to taste
Par boil the mixed Baby Squash. Drain the water and put the squash in an oven proof dish. Sprinkle the garlic and parsley over the squash. Add the garlic salt and drizzle the olive oil and mix it well. Sprinkle the parmesan cheese and the bread crumbs and spray with some cooking spray and bake in an oven at 350 degrees for 10 mins till lightly toasted.!!!
