Salvo Sardo, Chef de Cuisine at Ronda Locatelli at Atlantis, The Palm has led an outstanding and diverse career, from working in some of the most prestigious hotels in Sicily to Michelin star restaurants in London. His passion for quality and fresh ingredients ensures Ronda Locatelli is consistently leading the way in Italian cuisine in Dubai, forever sourcing new and local suppliers, with the aim of bringing the best of Italy to the UAE. A native of Catania, an ancient port city on Sicily’s east coast, Sardo began cooking at a young age, learning how to source the best in fresh ingredients and cooking traditional Sicilian dishes such as “Maccheroni alla Norma” with his grandmother. Inspired by her passion for food, Sardo began his career as a chef at the young age of 15. Forever following his dream, Sardo worked across several luxury five star hotels in Sicily including the Grand Hotel Baia Verde and fine dining restaurant Bistro Del Porto before saving enough money to find his fortune in London, where a chance meeting with Giorgio Locatelli which was set to change his path forever. Sardo started work under Giorgio’s guidance at the Michelin Star Italian restaurant Locanda in 2009.

Celebrity restaurant Ronda Locatelli wants 2019 to be about everyone and they are proud to introduce a vegan menu made up of 40 dishes including starters, pizzas, pastas and desserts alongside the usual Italian a la carte menu.

We are in the final stages in closing the loop of the plastic recycling process and we will start producing Polo Shirts from textile fibres created from the plastic bottles. The revenue from the merchendize net sale is donated to Al Jalila Foundation. We are the first water brand in the UAE to launch such a sustainability program

10th Italian Cuisine & Wines World Summit Dubai:

The Italian Cuisine and Wines World Summit, the longest and most prestigious event dedicated to the promotion of the cuisine, wines and the “Made in Italy” agro-food industry, is celebrating the final stage of its tenth anniversary edition roadshow in Dubai.
