This entire recipe is 22sp on WW to blue 💙 and purple 💜 and for the Green 💚 plan you count the eggs so its 28 total sp unless you substitute them with egg creations or egg substitute!!

This recipe makes approximately 12 large burgers! But it depends on how thick and big you make them!!!

Tip….make sure they are thick because they are delicate and will break apart.

Ingredients :

1cup of uncooked quinoa (I love the tri color one but any one is fine) 16sp cooked
3 extra large or large eggs (you can use egg substitute or egg creations too! 1/4 cup equals 1 egg)
Vidalia and green onion or any kind is fine
Any peppers (red, orange, yellow, green)
Shredder carrots
Optional : use whatever veggies you like :broccoli, zucchini shredded
Use a large or small amount of vegetables it’s up to you as long as you end up with 1 cups worth altogether
1 tsp or more garlic powder or fresh garlic
1/2 tsp or more onion powder
1/2 tsp or more Mango Chipotle seasoning by Club House (any seasoning that you have or want is fine)
1tbs sugar free or regular bbq sauce (I use Guy’s bbq sauce)
4 tbs shredded low fat cheese 2sp
1/2 cup seasoned bread crumbs
Salt and pepper to taste

Directions :

For the quinoa :

Wash quinoa well with cold water
Add 2 cups of cold water and Sprinkle salt
Let come to a slight boil
Turn temperature right down to low
Cover with a tight lid and do not open
Cook for 17 minutes or so

Allow to cool completely and fluff up with a fork

In a large skillet add olive oil spray and put on oven top on a medium to high temperature

Add cut up veggies (I make lots so I can keep for other recipes in a plastic baggie in the freezer)
Sautee until brown and soft
Allow to cool

In a large bowl add all your ingredients and mix well.
Form patties with a medium round cookie cutter, burger press or by hand.
Make sure that they are a good thickness

Add olive oil spray on your skillet to avoid sticking

Add burgers and cook on a medium heat
Allow them to cook at least 5 minutes before flipping them over. Use a thin spatula to check if they are a nice golden brown before flipping the over.
Once cooked you can eat immediately or allow to cool down!

Store in your fridge in a sealed container up to 5 days! They don’t last long so I have never frozen them!!

Reheat in the oven to regain the crispy texture!

Add your favourite bun (check out my very fast and easy microwave mug bun recipes too)
Add your favourite condiments too!!
Enjoy with a salad or any of my delicious side dishes for a well balanced meal option!!
