So simple so good🍝. 👨🏻‍🍳The flavours of this recipe take me back to the time when I lived with an Italian-American friend and when his father “Don Orazio” used to come over and cook🤩. I learned this recipe by looking and listening to Don Orazio’s funny stories while he was cooking. The best part of these memories is that most of the time, our house smelled like a real Italian restaurant 😋. This is my version of a classic meatballs recipe and how I imagine the Italians used to eat. It’s one of our favourite comfort foods for winter and a dish that everybody can make and love…💯

Ingredients (serve 4) – Meatballs…250g minced beef // 250g minced pork // 4 tablespoons extra virgin olive oil // 1 small onion // 100g breadcrumbs // 4 garlic clove, finely chopped // 1 tbsp parsley, finely chopped // 1 tbsp oregano // 1 egg // ½ tsp sea salt // ½ tsp fresh pepper // 50g parmesan cheese
Tomato sauce …2 tbsp extra virgin olive oil // 1 medium onion (diced) // ½ tsp freshly ground black pepper // ½ tsp sea salt // 2 garlic clove // bunch of basil // 1 tbsp tomato paste // pinch of sugar // 2 canned peeled tomatoes // 250ml water

Method – 1. Combine meats, 4 tablespoons of virgin olive oil, garlic, parsley, egg, parmesan, bread crumbs, salt and pepper to a large bowl. Mix together using your hands. Shape the meat into small balls …2. Heat the oil in a pan and fry the meatballs until golden, turning the meatballs once, then cook for another 7 minutes, or until browned and cooked through. Remove from the casserole and set aside…3. Heat two tablespoons of virgin olive oil over medium heat. When warm, add the onion, basil, pepper, salt, and cook for 2 minutes. Add the tomato paste, garlic, oregano and sugar. Mix and cook for another minute, then add the tomatoes and water and bring to a boil and simmer for around 30 minutes…4. Add the meatballs back to the casserole and poach gently for 10 more minutes keeping the lid on…5.Cook the pasta following package instructions and serve dividing the pasta and meatballs among serving bowls topped with freshly grated parmesan and parsley
