It is a bit spicy sauce with red chilies not spicy as Indian foods though but, you can make it as spicy as you prefer, I am just saying Italian version wouldn’t be as spicy as Indian food. It Hence it is called Arrabiata Sauce. We can use any pasta but, commonly it is made with Penne pasta. I love to cook and experiment foods around the world. Ingredients :
600 grams Good quality Roma Tomatoes (don’t use country tomatoes)
1.5 to 2 long Dry or fresh red chilies
Salt as required
Good quality Olive oil
1 large or 2 medium-size garlic pods
0.5 TBSP of chopped fresh or dry Italian parsley
1/4 cup Grated of Parmesan cheese
100 to 150 grams of Penne Pasta(replace with any available pasta’s)
