🇮🇩Halo! Kali ini kita akan bikin gorengan khas Sicilia (bagian Selatan Italia): Arancini/Arancine 😋 Tergantung lokasi, ada yg menyebutnya dengan nama “Arancini”, ada juga yg “Arancine”. Gorengan yg satu ini terbuat dari bola nasi yg diisi dengan berbagai macam isian. Kali ini kita akan membuat salah satu isian yg paling klasik yaitu “ragù e piselli” atau saus daging & kacang polong.
BAHAN (10-16pcs):
Nasi:
-Beras arborio/vialone nano | 500g
-Kaldu sayur | 1,5L
-Mentega | 70g
-Garam | secukupnya (sekitar 2-3sdt)
-Safron (bisa diganti kunyit walaupun merubah sedikit rasa) | 0,25g
Isian:
-Daging cincang | 200g (biasanya 150g sapi + 50g babi, tapi boleh sapi aja)
-Wortel | 1
-Seledri | 1
-Kacang polong | 100g
-Bawang bombay | 1/2
-Daun salam | 2
-Cengkeh | 2-3
-Garam | secukupnya
-Wine | 1/2 gelas (tidak wajib, ada resep yg pake white wine, ada yg red wine)
-Saus tomat (bukan ketchup) | 200mL
-Keju caciocavallo | 150g (bisa diganti provola, mozzarella, etc)
Tepung/Menggoreng:
-Tepung terigu | 6-8 sdm
-Air | secukupnya
-Tepung panir | 300g
-Minyak goreng | 2L

-Arborio/vialone nano rice | 500g
-Veg stock | 1.5L
-Butter | 70g
-Salt | to taste (around 2-3tsp)
-Saffron | 0.25g
Filling:
-Ground meat | 200g (usually 150g beef + 50g pork, but you can use all beef)
-Carrot | 1
-Celery | 1
-Onion | 1/2
-Peas | 100g
-Bay leaf | 2
-Cloves | 2-3
-Salt | to taste
-Wine | 1/2 cup (optional, some recipe calls for white, some red)
-Tomato sauce | 200mL
-Caciocavallo cheese | 150g (can be substituted with provola, mozzarella, etc)
Coating:
-Flour | 6-8tbsp
-Water | as needed
-Bread crumbs | 300g
-Frying oil | 2L

-Vino | 1/2 bicchiere (ho visto ricette con vino bianco e rosso, ho usato rosso)
-Passata di pomodoro | 200mL
-Caciocavallo | 150g (o provola, mozzarella, ecc)
Impanatura:

-Pane grattuggiato | 300g
