At Popina, chef Chris McDade works the flavors of his Southern roots into his Italian dishes.
He seamlessly blends Southern staples like collard greens and ham hock into house-made pappardelle, which he rolls out on the front table every day. He draws on Nashville’s beloved hot chicken for his hot chicken Milanese and Louisiana crawfish boils for his crawfish carbonara.
