Two large or five small eggplant, sliced thin ( round )
1 onion, sliced
1/4 cup X2 olive oil Filippo Berio brand preferred
1 pkg. Divella Capillini #11 pasta or other
1 can diced tomatoes
1 -1/2 cups tomato sauce ( Ragu brand preferred )
1/4 cup tomato paste
1/4 cup dried oregano ( spice )
1/3 cup grated Parmesan cheese ( optional )
salt and fresh ground black pepper
cooking time (excluding preparation ) 25 min. (approx.)
