Bourbon Peach Cobbler is one of my favorite desserts during summer, cause it is really easy to make and absolutely delicious. Just imagine sweet moist peaches with a touch of Bourbon, covered with a nice layer of cookie and a scoop of ice cream on top.
You just need to find big ripe peaches! If not, you can use canned peaches, but I suggest you let them drain for a few hours before using it.
Bourbon Peach Cobbler
Ingredients:
6 ripe peaches
sugar 60g.
Bourbon or similar 50ml.
Cookie:
flour 120g.
sugar 100g.
brown sugar 50g.
cinnamon half teaspoon
a pinch of salt
baking powder 1 teaspoon
melted butter 120g.
vanilla extract 1 teaspoon
Extra: butter (room temperature) 2 tablespoons
Instructions:
1. Peel the peaches and slice them. Add the sugar and Bourbon.
2. In a large pan, add a tablespoon of butter, then add the peaches. Boil them until the sugar dissolves.
3. Meanwhile, in a bowl, combine the flour, two types of sugar, cinnamon, baking powder, salt, vanilla extract, and melted butter. You will obtain a cookie batter.
4. Once the peaches are ready, spread some butter on a cake pan, then add the peaches without the liquid left in the pan.
5. Cover the peaches with the cookie batter. Here you can add it as you wish since the final look of the cake should be rustic. Optional, sprinkle some brown sugar on the top. (My advice is not to make a very thin layer, since it can burn fastly in the oven.
6. Bake the Bourbon Peache Cobbler in the preheated oven at 190°C for 35-40 minutes.
7. Let the cobbler cool down for 10 minutes, then add a scoop of vanilla ice cream.
