Homemade orecchiette with a fresh, simple tomato sauce: a typical pasta dish from the south of Italy. This is a true classic of the Apulian cuisine and perfect for Sunday lunch!
This pasta – orecchiette – got the name from its shape which looks like an ear. In my video I show you how you can easily recreate this shape – it is not as difficult as it might look.
Recipe for 4 portions.
Ingredients for the pasta dough:
– FLOUR: 500g (durum wheat semolina)
– WATER: 220ml
Ingredients for the tomato sauce:
– FRESH TOMATOES: 1,5kg (San Marzano / Cherry / Pachino / Piennolo / Datterino)
– EXTRA-VIRGIN OLIVE OIL
– GARLIC 1 clove
