Peri Peri Pizza:
Ingredients for Peri Peri Sauce:
Onion chopped 1 tbsp
Garlic chopped 2 tbsp
Oil ¼ cup
Vinegar ¼ cup
Water ¼ cup
Red chili crushed 3 tbsp
Salt 1 tbsp
Black pepper 1tsp
Mayonnaise ¼ cup
Ingredients for Chicken Topping:
Chicken boneless cubes 1 cup
Garlic paste 1 tbsp
Oil 2 tbsp
Vinegar 2 tbsp
Red chili powder 1 tsp
Salt as required
Black pepper ½tsp
Food color few drops
For Pizza Dough:
Flour 500 gm
Yeast 1tsp
Salt 1tsp
Sugar 1tsp
Bread improver ½tsp
Egg 1
Butter 1 tbsp
Water as required
To Prepare Pizza:
Pizza dough 1
Pizza sauce as required
Chicken topping as required
Cheese as required
Capsicum julienned as required
Onion julienned as required
Tomato julienned as required
Olives as required
METHOD
For peri peri sauce add all ingredients in blender except mayonnaise. When it becomes thick add paste in mayonnaise. For chicken topping mix chicken and all ingredients in mixing bowl and keep in fridge for 2 hour. Add oil in frying pan heat well. Add marinated chicken fry well. For dough, mix flour and all ingredients in bowl with knead well. Leave for 10 minute to rinse. Make ball and roll, place in pizza pan. When it’s double in size half bake in preheat oven for 4-5 minute. Add peri peri sauce, chicken topping, cheese and all remaining topping ingredients. Bake in pre heat oven for 5 to 6 minute. Apply butter or oil on slice & serve.
Masala Wings:
Ingredients for Wings:
Chicken wings with skin 10 -12
Ginger garlic paste 1 tbsp
Green chili paste 1 tbsp
Lemon juice 2 tbsp
Salt as required
Red chili powder 1 tbsp
All spice powder 1 tsp
Flour 2 – 3 tbsp
Corn flour 2 – 3 tbsp
Eggs 1
Oil for frying
For Masala Sauce
Tomato ketchup ½ cup
Chili sauce 2 tbsp
Lemon juice 2 tbsp
Chaat masala 1 tsp
Salt as required
METHOD
In mixing bowl add chicken wings and all ingredients mix well and keep in fridge for 2 hour. Heat oil in wok add wings cook on low flame for 10 to 12 minute till wings is done. Add all ingredients of masala sauce in it cook for 1 minute. Coat fried wing in sauce well and serve hot.
Smoked Lasagna:
Ingredients
Chicken minced 1 cup
Oil 2- 3 tbsp
Chopped onion ¼ cup
Garlic chopped 1 tbsp
Tomato chopped ½ cup
Tomato ketchup ¼ cup
Red chili crushed 1 tsp
Salt as required
Black pepper 1 tsp
Sugar 1 tbsp
Oregano 1 tsp
For Smoky Sauce:
Milk 1 cup
Butter 2 tbsp
Flour 2 tbsp
BBQ Sauce 4 tbsp
Salt as required
To Prepare Lasagna:
Lasagna sheets 8 – 10
Chicken minced as required
Smoky sauce as required
Cheese as required
METHOD
For mince, heat oil in pan sauté onion. Add garlic and mince cook well. Add tomato and all ingredient mix well. Add little water leave for simmer. When meat is done, cook well. For sauce add milk, butter and flour in sauce pan cook till it becomes thick. Place pasta sheets in oven proof dish. Layer mince on it. Add smokey sauce and cheese layer on it. Add cheese and place in pre heat oven bake for 10 to 12 minute.
