Hey guys! Here you can find my tutorial of how to make Italian homemade gnocchi. You can use any kind of sauce. Here I decided to use MY Pistacchio Pesto recipe with fresh mortadella and buffalo mozzarella. I also decided to make them very thick but if you want you can make them smaller as the respect of the tradition. The wine I’m using isn’t a sponsor nut I just decided to incorporate it to the video because I find this a fantastic pairing.

Ingredients
Potatoes 3.53oz – 1kg
All purpose flour 2 3/8cup – 300g
1 Fresh egg
Salt To Taste
Directions:
Boil potatoes starting from cold water for about 40 minutes. Drain them and wait. As they get room temperature peel them and mash them. Add flour and egg until your dough is semi-dry. Let it rest for 30 minutes. Sprinkle semolina flour on your board, take an amount big as the palm of your hand and roll it. Cut it and “rigalo” so it will hold the sauce better. Cook it in boiling water for about 90 – 120 seconds.
