Recipe for: 2.5kg of Marmelade +-
Ingredients:
– Your fruit of choice, for us apricot
– Half the size of the fruit in sugar, for example, we used 3Kg of fruit with 1.5 Kg of sugar.
The real Italian recipe for apricot Marmelade:
Start by washing and cutting in slices the apricots and put them in a bowl, make sure it is big enough for mixing your wait of fruit with the sugar.
Add then the sugar, a little bit at a time and mix, keep doing this until you finish the sugar, in the end, result in the fruit and the sugar should create a sweet liquid together. Now take a big pot and put in it the mixture of sugar and fruit. Start heating the pot at low heat and let the mixture cook for about 2-3h, what you want to see is the sugar slowly dry, in the meantime, you should stir the Marmelade once every 15-20min at least to avoid it sticking to the base of the pot (and trust me that is a lot of work to take away the encrusted Marmelade.) By the end of the process, your sugar should turn darker, and the consistency to be the same as a normal Marmelade.
Transfer it in some jars.
As soon as you close the jar you want to turn it upside down and conserve it like that. That will create a vacuum seal that will help preserve your creation.
If you make the Marmelade this way I can assure you you’ll get an incredible taste (of course the fruit should be of quality) Don’t mind the darker color, I know you are used to seeing some Marmelades all colorful and shiny but that are full of preservatives.
