Looking for a new way to cook your favorite snapper? We replaced the chicken in chicken parmesan and created Mutton Parm! 🐟 It was a nice change from your typical pan seared snapper. In this dish we made homemade tomato sauce (but you could buy it as well), fresh fish, mozzarella and of course parmesan cheese! Recipe:

Fish Ingredients:
Mutton snapper or fish of choice
2 Eggs
1 cup Italian Bread Crumbs
Fresh Grated Parmesan Cheese
Fresh Mozzarella Cheese
Olive Oil
2 tbsp Parsley, chopped, plus more to garnish
3 Cloves Garlic, minced
2 tsp Garlic Powder
1 tsp Onion Powder

Homemade Tomato Sauce Ingredients:
3 Cloves Garlic, minced
1 tsp Italian Herbs
1 Onion, diced
14 oz Tomato Puree
Olive Oil
Salt and Pepper
*Option use store bought tomato sauce*

Prep Fish:
1. Whisk eggs in bowl. Add chopped parsley, onion powder, 3 garlic cloves minced, salt and pepper to taste.
2. Marinate fish in egg mixture for 15 minutes. (This is when we made our tomato sauce).
3. In a separate bowl combine Italian bread crumbs, 1/2 cup grated parmesan cheese and garlic powder.
4. Dip fish in bread crumb mixture.
5. Coat pan in olive oil and heat over stove. Lightly fry fish 2-3 minutes a side and transfer to greased baking pan.
6. Top fish with tomato sauce, mozzarella and parmesan cheese.

Tomato Sauce:
1. Coat bottom of sauce pan in olive oil. Add diced onion and cook for three minutes. Add minced garlic, cook for another minute.
2. Stir in tomato puree.
3. Season with Italian Herbs (we used McCormick) and salt and pepper.
4. Allow to simmer for 8 minutes.

Bake Fish:
1. Preheat oven to 425
2. Bake fish for 15-20 minutes or until cheese bubbles and is melted or until fish is white and flaky.
3. Garnish with parsley and enjoy!
