Key lime pie is an American dessert traditionally made with Key lime juice, egg yolks, and sweetened condensed milk held in a delicious pie crust. Key limes are small, tart limes that are found in the Florida Keys – hence the name Key limes. As we are in Australia, we are using regular limes and that is totally fine for this recipe.

The traditional version uses the egg whites to make a meringue topping but for this recipe we will be making an Italian meringue. As you will see from the video, the process is quite different to regular meringue but the soft, glowy peaks are well worth the little bit of extra effort.

This crust is so good. It holds the pie filling beautifully and is the perfect base for this creamy filling.

This dessert is super easy and really packs a punch in the flavour department. You will be very popular if you make this! You will win friends 🙂
