Today, my brother-in-law Alex will show you how to make his wonderful pizza. Something so easy Peasy to make and yet, that only Italians have been able to master so well! Alex will show you different traditional pizzas with different toppings but you can be creative and make your own one.

Disclaimer: you don’t have to have the oven you see in the video, don’t worry. Any oven works! 🙂
INGREDIENTS (for 8 round medium pizzas)
For the base
1 kg of type “1” flour
550gr of tepid water
25gr of fresh baker’s yeast
15gr of salt
4 to 5 table spoons of olive oil
For the toppings
Mozzarella
Passata
Sausages
Olives
Mushrooms
Ham
Anchovies
Arugula
Cherry Tomatoes
Basil
Etc etc etc (go wild!)
PREPARATION
Melt the fresh yeast in 50gr of tepid water. Put the flour in the mixer. Add the water and yeast mix. Then add start adding slowly the remaining 500gr of tepid water while mixing. Add salt and olive oil. If you don’t have a mixer, use a large bowl and either mix everything by hand by using a fork/whisker.
When the dough is ready transfer it into another bowl, cover it and let it rise for at least 30 minutes.
Make portion of equal weights and start working each one of them by hands. Form little balls of dough. Place them in a warm abs dry container and cover them. Let them rise for at least 3 hours.
It’s time to make the pizza! When you start working the ball of dough into a flat circle remember not to flatten the edges in order to obtain a good crunchy crust.
Use toppings of your choice. But remember one thing: when it comes to Italian pizza and toppings….less is more!
Cook If you have a special pizza oven, like the one in the video, cook at 400C n(750F) for 6-7 minutes. Otherwise, cook at 250C (480F) for 15-20 minutes in a standard oven – until the crust is brown and crunchy.
