Learn how to make sweet buns at home.. the Italian way! In this episode of “Piatto,” we learn how to make Italian Maritozzi from scratch using a KitchenAid stand mixer.
Maritozzi is a slightly sweet bun flavored with lemon zest and pine nuts. Traditionally, it often includes candied orange slices and raisins as well. In Italy, it is filled with fresh whipped cream.
With the texture of a brioche, Maritozzi also makes a great gourmet sandwich bun. Of course, you’ll want to leave out candied orange and raisins if you plan to use these Italian sweet buns in this way.

INGREDIENTS
All-Purpose Flour – 500 grams
Sugar – 95 g (white or fine cane)
Lukewarm Water – 250 ml
Dry Quick Rise Yeast – 4 grams (here, Red Star Yeast)
Honey – 1 teaspoon
Salt – 6 grams
Olive Oil – 85 g (or, a quality vegetable oil like sunflower)
Eggs – two, separated (recipe uses both yolks and whites)
Lemon – one, just the zest
Pine Nuts – 30 grams (optional)
OPTIONAL (but traditional)
Candied Orange Slices – 30 grams (diced)
Raisins – 30 grams (soaked for 10 minutes first in cold water)
