Ingredients:
16 gr sugar
10 gr dried yeast
470 gr plain flour
230 gr water
115 gr milk
12 gr salt
45 gr olive oil
Rosemary leaves picked
Sea salt flakes
We will start by combining flour, sugar and yeast in a bowl of a heavy mixer equipped with a dough hook. Mix to combine the ingredients.
On low speed of the mixer, slowly add water and milk. Next mix and add oil, keep going until the dough absorb the oil.
At the end add the salt and keep mixing.
Now we can transfer the dough to a bowl covering with clean film. Let it rise in a draft-free spot 2 hours.
Pour olive oil into a baking sheet, then place the dough on top. Use your fingertips to make dimples all over the dough. Drizzle the dough with a bit of olive oil, so it pools in the dimples, and sprinkle with sea salt and rosemary.
Cover the baking sheet with plastic and let the dough rise again 30 minutes.
Bake for about 35 minutes 190˚ (fan) until golden.
Let cool then transfer to a cutting board and slice. Enjoy.
