❤️🥨 Traditional South italian crispy “Taralli” dough recipe. By hand. White wine and fennel Taralli.

Ingredients for about 12 Taralli
Type 00 or type 0 or type 1 flour: 600g
White wine: 250ml
Extra virgin olive oil: 130ml
Sea salt: 20g
Fennel seeds: 1 tsp

1. In a bowl mix the flour, salt and gradually add the white wine and oil. Knead for about 15 minutes.
2. After making a hard dough, add the fennel seeds
3. Continue to knead on the work surface for another 5 minutes
4. Cut a part from the dough and create a thread half finger thick and three times the palm long
5. Join the ends by pressing firmly
6. Cook in salted boiled water
7. Remove as soon as they rise to the surface
8. Let them dry on a cloth for at least 5 hours
9. Bake on parchment paper for 30 minutes in a ventilated oven at 200°C
10. Turn off the oven and leave them inside for another 10 minutes
