A great earthy dish from the South of Italy: pasta with chickpeas, also known as “pasta e ceci”! This is a must try, otherwise you wouldn’t believe that with such few, basic ingredients, you can create a stellar dish.

I like to use dry chickpeas and then re-hydrate them by myself (I have more control on the overall process), but also canned chickpeas would work just as well. I just follow my nonna method here: this is really a recipe that is 100 years old!

Pasta with Chickpeas – RECIPE

Prep Time: 10 mins
Cook Time: 40 mins
Complexity: Easy

Ingredients (4 people):

350gr dry chickpeas
150gr pasta
4 anchovies fillets
400gr peeled tomatoes
rosemary
chili (if you want)
garlic
Parmesan cheese (grated)

Procedure:

1. There is a bit of preparation to be done with your dry chickpeas. Leave them to soak overnight in a pot full of water, at least 12-14 hours.
2. After 12-14 hours, get rid of the water, wash the chickpeas and put them in a pot, covering with fresh water. Bring them to boil and let them simmer for about 45-60 minutes.
3. Add salt to the chickpeas towards the end of the cooking time. Now, you have your chickpeas re-hydrated and ready to be cooked.
4. In a large pan, pour some oil, add the garlic and rosemary. Let all gently cook at low heat.
5. In the meanwhile, take some chickpeas from the pot and mash them to create a cream.
6. When the garlic is golden, add the whole chickpeas in the pan. Add the anchovies too.
7. Crush some peeled tomatoes in the pan, add some of the chickpeas cooking water and let all simmer for a few minutes.
8. Now it’s time to add the pasta. let everything cook for 4-5 minutes.
9. Add some of the chickpeas cream that we created. You choose how thick you want your dish, so add more cream if you like the consistency to be thicker.
10. When the pasta is ready, you are happy with the consistency of the dish and you have adjusted the salt, you are ready to plate your Pasta with Chickpeas.
11. You can add some finely chopped rosemary and chili on top, plus a generous sprinkle of grated Parmesan cheese if you like.
