Today’s menu is amatriciana.
Cook pancetta on low heat to extract its fat and flavor, and cook on high heat after adding white wine will condense its flavor. Heat tomato sauce for a while to make it mild. Add chili pepper to bring the flavor out, if you want to.
Ingredients:
・Bucatini
・Pecorino Romano
・Onion
・Pancetta
1. Slowly cook pancetta.
2. Add onion and stir it until it is caramelized.
3. Add white wine and boil down to extract moistures and alcohol.
(Boiling down the wine also helps reduce acidic of the wine.)
4. Add tomato sauce and boil down until it becomes thick sauce.
