MattMeals: MAFFEW’S BAKED, ZITI.

THE INGREDIENTS…
-1 pound Italian Sausage, I used “Spicy Italian” because I like a little kick
-1 pound Ground Beef
-2 Tablespoons Olive Oil
-3 cloves Garlic, minced up
-1 whole, larger onion, diced
-1 can (28 Oz.) whole tomatoes w/ juice
-2 cans (14.5 Oz.) tomato sauce
-2 teaspoons Italian Seasoning, about 8 grinds if you use a grinder
-½ teaspoon Red Pepper flakes
-Salt & pepper
-16 oz. Ziti pasta
-1 tub (15 oz.) whole milk Ricotta cheese
-1½ pound mozzarella cheese, grated
-½ cup grated Parmesan (pronounced Par-Me-Zee-Uhn) cheese
-1 whole egg
-Fresh parsley

THE INSTRUCTIONS…
-Heat olive oil in a dutch oven. Add onions & garlic and cook until translucent, remember that means clear! Add Italian sausage & ground beef & brown. Drain off fat.
-Add tomatoes, tomato juice, salt, pepper, Italian seasoning, and Red Pepper flakes. Cook for 25-30 minutes.
-Preheat oven to 375 degrees.
-Now, in a separate bowl, mix together all of the Ricotta cheese, 2 cups of the grated mozzarella, all of the Parmesan cheese, crack the egg-pop that sucker in there, & don’t forget the salt and pepper. Do that to taste.
-Scream GAHLAY!
-Drain the pasta. Pour it into the bowl with all that egg/cheese mixture & toss together a little bit. I think I use the word “morph” & “orgy” when describing this process. Thennnnn add the meat sauce & toss all of that together. Remember do not crush them noodles!
-Scream HODDAMIGHTY!
-Pour the final mixture into a greased casserole dish, of course I’m a big PAM supporter. Then, finally sprinkle with shredded cheese.
-Have a beer, a glass of wine, or drink of your choice.
-Let it bake for 20 minutes. Holler at the youngins & tell them to get cleaned up!
-And then finally, your MattMeals is complete! Get your Bear Mitts & carefully remove from oven. I’d say let stand 5 minutes before serving. Enjoy!
