Focaccia is one of the delights of Italian Cuisine. What you see in this video looks more like those of Southern Italy, but each has its own variant, each has its special ingredient, each region, country, city, even sometimes the neighborhood has its own type of focaccia which can be completely different from the one produced a few km away…
Recipe for two large focaccias:
450 gr of white flour
1 medium hot boiled potato
A cup of hot water
30 gr hot milk
10 gr of salt
3 spoons of Extra Virgin Olive Oil
Half a teaspoon of sugar
6 gr of dry yeast for the bread
For the dressing you can choose vegetables and spices to taste or even cook it only with oil and rosemary, for today I have chosen potatoes and cherry tomatoes.
Method:
To prepare the focaccia you can also use the kitchen mixer as a planetary mixer (I prefer to use it because I love fast and not too demanding recipes).
Start by dissolving all the salt in the cup of hot water by mixing with a spoon.
In the mixer bowl pour all the flour and make a hole in the center of it, pour half a cup of water with salt and milk into the hole, mix, then put the mashed boiled potato and the baking powder.
Try to dissolve the yeast in this liquid created in the flour hole.
Add extra virgin olive oil and half a teaspoon of sugar.
Turn on the mixer with the tool for the dough, the hook, put at low speed for the first 3 minutes and medium high for the remaining 8 minutes of dough.
If you see that the dough is too dry, add the hot water flush directly into the bowl and continue mixing.
The mass of the focaccia is almost ready!
Now put a handful of flour on the work table and knead all the dough by hand for 5 minutes until a smooth and elastic mass is obtained.
Now the funniest part and we’re done!
Take two 28-30 cm diameter pizza trays, grease the trays with olive oil also on the edges, cut half the dough and start forming your focaccia directly in the pan with your hands greased with oil.
Once the two focaccias are spread on the pan, season to taste with vegetables, spices and olive oil.
Put the focaccia already seasoned and ready in the oven off for 2 hours.
After two hours the focaccia has doubled its volume and is ready to be cooked.
Turn on the oven at 200 degrees and bake the buns for 20 minutes in a hot oven. Always check the cooking, the focaccia must be golden below and above.
