What you need ?
– 100 g vegan whipped cream ( I use @naturescharm coconut whipped cream )
– 30 g sifted sugar – 350 g homemade vegan mascarpone ( you can buy also ) for the homemade recipe visit my website ( link in my profile )
– 8 gluten free vegan SAVOIARDI ( homemade ladyfingers )
– 50 g hot coffee ( you can used decaffeinated )
– high quality dark cacao powder @santabarbarachocolate -1 TBs vegan dark chocolate chips @santabarbarachocolate
– 1 Tbs crushed pistachios
– 3 slices strawberries 🍓 .
Instructions ;
1. Using an electric mixer in small bowl whip together whipped cream and sugar until very thick ( about 5 minutes). A slight ribbon should fall from the batters or whisk attachment when lifted from the bowl.
2. In a bigger bowl add first the mascarpone and the whipped cream batter and continue whipping or using a spatula mixing until combined .
3. Prepare espresso coffe .
4. Transfer the mascarpone batter into a piping bag as in the video ( you can also use it in a baking dish or round cake pan would also work here and skip the step of the piping bag ).
5. Add to the bottom crushed pistachios / strawberries , using a softer dust with cacao and pipe in a layer of mascarpone batter into your @weckjars
6. Dip the savoiardi into the hot espresso and then break in half as needed to fit into the glass jar add on the mascarpone layer and dust again if you want with cacao or add more pistachios/ strawberries.
7. Repeat till you have all your jar / tray filled . Too with shaved or finely grated chocolate or chocolate chips or even strawberries if desired and dust extra cacao 😆
Enjoy immediately if you want . I love to wait about two hours before eating it . Store in the fridge up to two days covered
