Garlic
Extra virgin Olive Oil………………………………….half a glass
Parmigiano and pecorino cheese…………….. 3 oz or 70g
Pine nuts…………………………………………………0,5 oz. or 10g

Pesto is one of the most famous italian recipe in the world.
And the reason,is easy!
Enjoyng some pasta with pesto in a sunny spring day, maybe in front of the Ligurian Sea, is a real dream for anyone.

Traditionally, it should be made using a “Mortaio” a particular tool used since centuries.
Anyway, it’s quite an hard job, so we’re going to use a normal kitchen mixer.
Maybe the tradition will not be fully respecred, bit I’m sure that your pesto will be the best in your life!

PROCEDURE

– Put garlic, oil, pine nuts and a half of the leaves of basil in the mixer and turn it on at maximum speed
– After a few seconds, you’ll see the ingredients beginning to mix, if not genlty add some oil
– Once it all will be finely chopped and mixed, add the other leaves, keeping adding some oil if you see they stuck in the mixer
– Add the grated cheese and mix all togheher for a last time.

Now you’re ready to enjoy your pesto with some spaghetti, some typical trofie pasta, but even some bread for example!
