Ingredients
250g Rice Noodles (pancit bihon)
250g chicken breast cut into small slices
2pcs carrot julienne cut
1/2 small cabbage chopped
1/2 broccoli cut in pieces
1/2 onion chopped
2 bulb garlic minced
3 tbsp soy sauce
black pepper to taste (optional)
450ml shrimp stock
pinch of salt if needed

Instructions
In a large pot, Saute the garlic and onion.
Add chicken then let cook for 2 minutes.
Add 2tbsp soy sauce and pepper.
Add the shrimp stock 250ml then simmer for 10 minutes.
Put in the carrots, cabbage,broccoli and simmer for a few minutes and set aside.
In another pot, pour the remaining shrimp stock, add 1tbsp soy sauce and mix well.
Add the pancit bihon (makes sure to first soak it in water for about 10 minutes) and mix well.
Cook until liquid evaporates completely.
Add pancit bihon to vegetables and meat and simmer for 1-2 minutes.
