Flan is a caramel custard dessert originated in Spain,Portugal,Italy and France and from there it spread around the world. It is named different in different places. Flan is also know by terms like creme brulee,egg custard,caramel pudding,caramel custard,egg pudding.

Ingredients for caramel
Sugar 4 tbsp
Water 4 tbsp
Ingredients for custard:
Milk 400 ml
Sugar 5 tbsp
Eggs 2
Vanilla essence 1 tsp

Note:
◇caramelize the sugar till dark golden or light brown in colour. If you caramelize it more then the custard will have bitter taste in end.
◇ Egg size matter in setting the custard. I have used medium sized eggs weighing 60g each with shell. So if you are having small size egg you can increase the egg no.
◇Time of baking may vary depending on size of bowl and specification of oven. If you are using shallow ramekins then bake for 30 to 40 minutes.If you are using deep bowl then it will take more time for baking.
◇Do not boil the milk. You just have to heat it up. While mixing with egg whisk as fast as possible by adding little milk at a time.
◇Strain the milk-egg mixture and discard the schiuma.
