Italian-style Specific Carbohydrate Diet friendly stew. Also AIP friendly (I think) since it uses wine but the alcohol is cooked off. Simple to make and very delicious. Cook it for as long as you like- the meat will be even more tender if you simmer for 3 hours instead of 40 minutes before adding the mushrooms for the last 10 minutes.
This beef and mushroom stew is great on it’s own, or you could also serve with roasted vegetables, mashed rutabaga, or another side dish.
