Chef Vito Mollica from Four Seasons Florence’s restaurants is here to teach us what lampredotto is and how to turn it into a gourmet sandwich recipe everyone will love.
Lampredotto is beef belly meat, and is typically featured as a sandwich in outdoor kiosks around Florence. Chef Vito Mollica recommends his beef recipe of boiling your lampredotto in a broth with carrots, tomatoes and seasoning until the meat is well cooked and tender.
Chef Mollica’s lampredotto sandwich recipe first begins with a toasted Panini or mini Panini called a Panino. Sauces recommended by Chef Mollica to put on your gourmet sandwiches are a salsa verde and salsa picante. The salsa verde Chef Mollica makes is a combination of parsley, capers, anchovies, live oil and vinegar, blended until smooth. Dip your toasted Panini slices lightly into the bullion broth you are keeping the lampredotto in. Next, take out a piece and shred your lampredotto. Place inside the Panini, top with salt, salsa verde salsa picante and serve. Buon appetito from Four Seasons Florence!
