Mini prosciutto frittatas are one of my favorite on-the-go breakfast, cuz they are simple to put together, fast, healthy, and incredibly flavorful! These bite-sized egg muffins are the perfect keto breakfast idea – they’re full of goodies, low carb, and high in protein. One more bonus…yup, you guessed it right – meal prepping! You can always store them in the fridge in the airtight containers up to 4 days, reheat them whenever you feel hungry and voila, you have magnificent egg muffins within 30 seconds, warmed up in the microwave!

Fresh free-range eggs, slices of prosciutto, good-quality cheese, sautéed and lightly seasoned vegetables, a drizzle of extra-virgin olive oil with rich flavors of garlic, oregano and dried basil…Can it sound more Italian than that? Oh, I bet you will fall in love with this simple Italian style breakfast!

So let me show you how to make the perfect mini Italian style frittatas (prosciutto-wrapped egg muffins/eggs in prosciutto baskets, if you wish 😋)

For 12 mini egg muffins you will need:

▫️4 eggs
▫️1 bell pepper
▫️6 cherry tomatoes
▫️6 prosciutto slices
▫️100 gr mozzarella
▫️3 garlic cloves
▫️1 tsp dried basil
▫️1 tsp oregano
▫️olive oil
▫️Italian flat-leaf parsley
▫️salt and pepper to taste

Slice off the sides of bell pepper, remove the ribs, put it skin side down onto the board and slice the pepper into thin strips. Cut the cherry tomatoes into quarters. Place the garlic clove under the chef’s knife and slam on the flat side of the knife with your fist to smash it. Chiffonade and chop the parsley, add it to 4 cracked eggs, season with salt & pepper, and mix well. Cut prosciutto slices in half. Preheat a sauté pan over medium-high heat. Add olive oil and heat until shimmering. Lower the heat to medium-low and gently cook the garlic until slightly golden. Add our sliced peppers together with cherry tomatoes to a pan, season with salt, oregano, and dried basil. Cook until tender. Put sautéed veggies into our prosciutto-lined muffin tin, add grated mozzarella cheese and pour the egg mixture. Bake at 180°C for 15 mins, or until cooked through. Enjoy! ❤️
