CORN & MUSHROOM ARANCINI

INGREDIENTS :

1. BUTTON MUSHROOMS – 400 gms
2. SWEET CORNS – 200 gms
3. GARLIC CHOPPED – 5-6 cloves
4. FRESH CREAM – 1/4 cup
5. MOZERELLA CHEESE – 1 cup
6. OLIVE OIL – 2 tbsp
7. ITALIAN MIX HERB SEASONING – 1 tsp
8. CHILLI FLAKES – 1 tsp
9. SALT – 1 tsp
10. BLACK PEPPER – 1/2 tsp
11.( CORNFLAKES OR – As required
BREADCRUMS OR CRUSHED RUSKS)

DIRECTIONS :

1. Heat olive oil in a pan and saute chopped garlic until light golden brown.

2. Add sliced mushroom and saute on high flame until all the water is released from mushroom, reduced and evaporated.

3. Add sweetcorns, mix herb seasoning, chilli flakes, salt and black pepper and saute for 30-40 sec on high flame.

4. Bring it to medium flame and add fresh cream and mozerella cheese and mix on low flame until mixture is thick and collected together.

5. Transfer the mixture to a bowl and cool it down well for 20-25 min.

6. Apply oil on hands and make small balls of mushroom corn mixture.

7. Coat the balls well with either breadcrumbs or cornflakes or crushed rusks.

8. Pre heat the air fryer at 160-180°c for 4 min.

9. Place the balls in air fryer and air fry for 8-10 min. at 180°c.

10. Serve with BBQ sauce or tomato sauce or any dip of your own choice.
