Welcome back everyone, I hope that you’re all keeping safe in quarantine at the moment! I am sure that a lot of you are missing your normal life – seeing your friends and family, going shopping and going to restaurants, because I definitely am. So, I decided that instead of us having to suffer completely (even though this is keeping us safe), I can bring these recipes from our favourite restaurants at home.
I am starting with Ask Italian Bruschetta which I have tested out, and given you my honest review of the bruschetta. Please comment down below which recipes from Ask Italian or other restaurants you would like me to try next and if you have tried out the bruschetta.

Recipe:
300g tomatoes, chopped
80g sundried tomatoes in oil, drained and chopped
1 red onion, chopped
1 garlic clove, finely chopped
5 fresh basil leaves, finely chopped
A pinch of oregano, as well as salt and pepper
1 tablespoon balsamic vinegar
2 tablespoons olive oil

1. Mix all the ingredients together in a bowl.
2. Toast 10-12 slices of bread of your choice under the grill or in the toaster.
3. Spoon the tomato mixture on the toast and serve immediately with extra basil and olive oil if you wish.
