The authentic Torta Caprese is a classic, flourless, chocolate cake from the island of Capri and it’s one of the most popular chocolate cakes all over Italy. This is my top-of-the-list, easy chocolate-cake recipe. Loved by all, it also happens to be perfect for those on a gluten free diet. Enjoy!

*for a 10 inch (26cm) baking pan

● Ingredients:

1 ½ cup (200g) dark chocolate
1 ⅓ stick (150g) butter
four egg whites (130g)
¾ cup (150g) brown sugar
three large egg yolks (60g)
salt
2 cups (200g) almond flour
almond extract
extra butter
powdered sugar

● Steps:

1. Preheat the oven to 350°F (180°C).

2. Melt chocolate and butter in a double boiler (Bain Marie).

3. Mix egg yolks, salt, half the sugar and almond extract. Set aside.

4. Whip egg whites, adding the remaining sugar gradually, until stiff peaks. Gently incorporate into the egg yolk mix. Add the almond flour, in two to three batches. When they reach 113-122°F (45-50 °C), add the chocolate and butter, gradually.

5. Bake for 35-40 minutes. It’s done when the skewer comes out clean.

● Tips:

1. Grease the pan with softened butter and line it with parchment paper.

2. Once baked, dust the cake with powdered sugar.
