Pesto Genovese is undoubtedly one of the world’s great culinary pleasures.
The beauty of pesto is that it can be made by anyone, even those who don’t enjoy cooking.
Throw fresh herbs with garlic, oil, and some cheese in a blender, and you have a quick topping for pizza, pasta, wraps, burgers or whatever you fancy. The possibilities are endless.

Ingredients
Basil Pesto – Makes 1-1/2 Cups
2 packed cups of fresh Basil
1/2 cup Extra-Virgin Olive Oil
3 Garlic Cloves
1/2 cup finely grated Parmesan (Amul Cheese/ Nutritional Yeast)
1/2 cup bread crumbs**
1 tsp Salt or per taste
2-3 Ice Cubes
Cooking Instructions:
Retain the vibrant bright green color of the basil by blanching it. In order to blanch the basil, throw it into boiling water for 10 seconds and then shock it in a bowl of ice-cold water.
Place all the ingredients in a blender and pulverize until nearly smooth or to desired consistency.
**For the bread crumbs, use any kind of hard bread load and pulse it in a blender. Packaged bread crumbs can be used as well, but may not provide best results.
