This recipe I got from the NY Times Cooking. It literally is to die for. Pure comfort food.
The Recipe can be made with chorizo, or sausage but we prefer vegetarian so I made it without.

Recipe
Kosher salt and pepper
1 Tbsp vegetable oil or olive oil
5 ozs cremini mushrooms, sliced
1/4 lb fresh chorizo or Italian sausage, casing removed, optional
8 ozs cavatappi
2 Tbsps unsalted butter
4 garlic cloves, minced
3 Tbsps all purpose flour
1 cup vegetable stock or chicken
3/4 cup whole milk
1/4 cup heavy cream
1 tsp onion powder
1/2 tsp smoked paprika
1 1/2 cups shredded mozzarella
1 cup shredded mexican cheese blend
1/2 cup parmesan cheese
sliced scallions for garnish
