In case you missed Svetlana’s recipie, here’s how you make this traditional Sweet Potato Italian Gnocchi.
It’s really easy!
Microwave (or bake if you have time) the potato until it’s soft (in it’s skin so you have the starch).
Then scoop it out of its skin and mash up until it’s smooth.
Add an egg, add flour until it’s like dough and not sticky.
Knead the dough (but not too much) and then divide into 4.
Roll it into a snake and cut the 2cm long pieces off it.
Then roll the 2cm peices down a fork to get those grooves.
Then boil them. Wait until they rise to the top of the water, then chuck them into a pan with butter.
You can cook with pesto, cheese and a glass of wine.
