Carbonara pasta sauce is said to come from Rome in Italy. Very high in cholesterol it is made from fresh cream butter a lot of yellow egg yokes and non-crispy bacon ( or various kinds of pork ) and a bit of grated cheese such as powdered Italian hard cheeses . It tends to include salt and be quite salty and freshly grated black pepper. There can also be a hint of white wine. It absolutely MUST NOT be over cooked so that the egg in this dish does not harden. The egg in this dish must be warm to hot and must not cook to the point of hardening . It should be smooth and creamy and velvety. Also the pasta used should not be over cooked. It should be a bit firm to the tooth.
