This is the BEST ITALIAN RED SAUCE EVER, …seriously, it’s easy, but it tastes amazing! Can be used on pasta, on eggplant or zucchini alla parmiggiana, or simply with bread… yeah I do that too! I will go over the ingredients and explain their importance as well.
This red Italian sauce recipe is from my Grandma Ida, she was AMAZING in the kitchen and I am so happy to have learned so much from her.
In this video I am also giving you a fun little lesson on a special type of pasta!

The Recipe is for one regular bag of pasta, or 4 servings with generous amount of sauce (**In Italy this would be enough for 2 bags of pasta as we use much less sauce):
** YOU CAN MAKE THIS VEGAN BY OMITTING THE PARMESAN CHEESE AND THE ANCHOVIES PASTE**
1/4 cup Extra Virgin Olive Oil
1/2 Yellow Onion
1 Can, or box Tomato Pure (I use Pomí)
1 TBSP Vegetable Bouillon (I used Better Than Bouillon – Vegetable)
(If you don’t have bouillon you can use salt to your liking)
1 to 2 Inches Anchovies Paste
1 garlic clove (OPTIONAL, I dont use it)
1 good bag of Penne Pasta
1/4 Cup water
For PASTA WATER
1/4 Cup salt if coarse sea salt, or 2 TBSP if regular salt
MAKING THE SAUCE:
Chop the onions, pour the olive oil and the onions (and the garlic if you use it) into a large pot and start simmering the onion at medium temp until the onion are getting a bit transparent.
Add the tomato, bouillon, anchovies paste and 1/4 cup water (I use it to rinse the tomato box…get it all!!), stir and let simmer medium low for 20-30 minutes. Stir occasionally and DON’T FORGET!
Turn off sauce when done, and NOW add basil, not when it is boiling, it will be bitter! Stir.
PASTA COOKING:
While this cook, place LARGE quantity of water in a pot and add salt bring to a boil and add pasta. Set timer…
**PLEASE NOTE YOU DO NOT NEED OIL IN THE WATER IS THE PASTA IS ITALIAN (Barilla, DeCecco, Garofalo, BioNature… etc….)
When done marry the pasta and the sauce, add a good dust, … ok … more like a little avalanche of Parmesan cheese and ENJOY!!!!
