Good morning, everyone! I hope you are have a quarantastic day! This morning, I am cooking a delicious ham, Italian cheese, and mushroom omelette and serving it up with some fresh ground coffee (of course; first things first!) and 100% Concord grape juice!

Ingredients:

*6 large organic free range eggs (for two ppl)
*1/2 oz organic white onion
*1/2 oz fresh mushrooms (I love Shiitake mushrooms, but use your favorite/s.); if dried, soak in water for about 5-10 minutes.
*2 oz Italian blends of cheese ( I used Provolone, Parmesan, and Asiago.)
*2-3 tablespoons whole milk (Again, use whichever you prefer)
*Dash of salt and pepper to taste
*1/2 oz oil of choice (I used Sunflower for a light mellow taste.)

Serve with a cold glass of Concord grape juice and coffee…mostly coffee! Enjoy!
