Today we prepare an ancient Roman chicken stew, fragrant with spring aromatic herbs and Mediterranean spices, a great example of a main dish served during the primae mensae in an ancient Roman convivium.
Ingredients:
chicken
dates
honey
garum
white wine vinegar
olive oil
spices (long pepper, cumin, fennel seeds, asafoetida)
fresh herbs (mint, thyme, rue)
