Ella and I spent some time in the kitchen this afternoon and she prepared one of my favorite dishes! It was a big hit! I hope you enjoy the video! The recipe is below!
Zuppa Toscana
16 oz of Mild or Spicy Italian Sausage
8 Slice of Bacon – cut into small pieces
1/2 Medium to large onion – diced
2 clove of garlic-minced
32 oz chicken broth (I used low sodium
3 cups of water
5 medium russet potatoes – sliced fairly thin and quartered
4 cups of kale
1 cup of whipping cream
Salt and pepper to taste
Parmesan cheese
1-Brown Italian Sausage and remove from Dutch Oven or Pot using a slotted spoon to leave remaining grease in pot
2-Cook bacon cut into small pieces and cook until crispy
3-Add onion and cook until translucent
4-add garlic and cook for 1 minute, stir frequently
5-Add chicken broth and water to the pot
6-Add potatoes and cooked sausage to the pot and bring to a simmer over medium heat until the potatoes are fork tender.
7-Add Kale to the soup and cook 5-10 minutes, stirring occasionally (just to soften the kale)
8-Stir in the heavy cream and allow cream to heat completely through.
9-Ladle into your bowl and grate parmesan on top!
