Ciabatta bread was developed in Italy as a response to the French Baguette that had spread across the Italian Peninsula. The chewy crust and open airy interior of this bread comes, in part, from the biga or starter that also injects flavor. The wet dough transforms into a truly flavorful bread though somewhat flat in shape as it is sometimes called Italian Slipper Bread.
