Mamma Mimi’s Italian Cooking Tutorial: Episode One: Nonna’s Tiramisu Recipe

Ingredients:
2-3 large cups of strong Coffee
4 Eggs
1-2 packets of Savoiardi Biscuits (or Sponge Fingers)
250g Mascarpone
Sugar
Rum
Chocolate (powder or crushed)

Prepare your coffee and then pour it into a deep plate or shallow bowl, add Sugar.
Separate the Egg white from the yolk.
Leave the yolk to the side and whisk the white until really fluffy and rigid.
Add Mascarpone and 4 tbsp of sugar to the separated yolk and whisk.
Once creamy, delicately add the fluffy Egg white to the Yolk and stir well.
Soak the Savoiardi in the Coffee mixture, so that the Coffee seeps through the sponge without causing them to become too soggy and break.
In a wide, deep dish, place the Savoiardi flat to create a single, coherent layer and then add a layer of cream over the top.
Continue until all of your ingredients have been used up.
Crush the Chocolate or use a Chocolate powder and then sprinkle over the top layer of cream.
Cover and leave in the fridge for a few hours before serving.

Tip:
Make sure that there is absolutely no yolk mixed in with the Egg white when you go to whisk it, to ensure the correct consistency.
